Oil’s Well that Ends Well

“Captain, it’s reckless homicide, EFA deficiency,” blurted the C.S.I. newbie, as he watched the EMTs load the blue-faced corpse onto the creaking gurney. This was the perp’s second heart attack. This time, the murderers finished the job. Greg won’t be showing up tonight to walk the dog or have a happy family supper.

The captain pondered the tragedy. The triggerman: hydrogenated oil, aka Trans fats that saturate grocery store and restaurant fare ingredients. The COD: heart disease from eating hydrogenated oils plus a diet devoid of essential fatty acid (EFA’s) Omega 3 and a lifetime of sucking down dead food that our creator hadn’t intended us to eat. The low-fat diet hoopla stripped America’s food supply of EFA’s triggering a crime wave of diseases. His heart sank when he read children brought up on low fat diets without EFA’s are more likely to be sickly and frequently exhibit aggressive behavioral problems and learning debilities. Big Food knows low-fat foods have much longer shelf lives than fatty foods so they’ve hired advertisers to create fat-phobia. He learned corporations take perfectly healthy raw oils, in their God-given state, chemically extracted them, exposed them to soda ash, and then de-gum, refine, neutralize, filter, bleach, deodorized and heat to very high temperatures. Pick up some junk food, read the ingredient label and you’ll see the term ‘hydrogenated.’

Later the captain got online to profile hydrogenated oils. His moral curiosity wanted to know how the FDA could approve such claptrap. His eye caught an intriguing Web site on the health benefits of Omega 3. “Wow, they actually heal!” The temple requires Omega 3’s for life and for health and cannot make it from anything else we eat; therefore it must be obtained from food. “Essential” meaning too little for too long shortens lives. Grind up EFA-rich flax seeds in a coffee grinder then sprinkle them on everything you eat. Cold-water fish eaten twice a week should supply you with enough, but I understand salmon farms put food coloring and antibiotics in the feed.

Every cell, tissue, gland and organ in our body requires EFA’s. Nutritionally illiterate doctors won’t tell you your heart attack, stroke or embolism was caused by EFA deficiency, or that your arthritis, depression, diabetes, weak bones, dry skin, low energy, bipolar, obsessive-compulsive, anxiety, hormone imbalance or poor healing can be signs of insufficient Omega-3 in the diet.”

The next morning over oatmeal with blueberries and hot tea, our captain poured over the evidence. The Cleveland Clinic and the American Dietetic Association say, “In the body, hydrogenated oils act like saturated fats and tend to raise blood cholesterol levels. Be prudent about how much you consume, especially if you have high cholesterol levels already.” Health experts agree, after several decades of research, consumption of hydrogenated oil promotes heart disease, strokes, cancer, diabetes, immune dysfunction, obesity and reproductive problems.

Grocery store and whole foods grocers carry a delicious rainbow of healthful, environmentally-friendly cooking oil and junk food alternatives. Politely ask questions and look around ankle level. That’s where you’ll find the delicately fragrant expeller, cold-pressed olive, and nut oils brimming with fats that heal.
